Have a browse through our Christmas range and select the products you would like to order. We will get them ready and packed for you to collect or delivered provided your order is more than £50 and you live within 2 miles of any of our stores.
You can choose from the following collection and delivery times on the checkout page:
22nd December – pm (2:00 pm – 5:00 pm)
23rd December – am (9:00 am – 1:00 pm) or pm (2:00 pm – 5:00 pm)
24th December – am (9:00 am – 1:00 pm)
We will ask for a £20 deposit at the end of your order and your balance will be due on the day of collection or delivery.

Bayley & Sage wishes you a Merry Christmas
Absolute devotees of the field to fork philosophy, sourcing food and bedding of the highest quality from local producers, including the neighbouring arable farmer who provides feed oats and the subsequent straw for bedding. Adlington birds are given plenty of space to roam. They are free from hormones and growth promoters and reared to maturity.
It is important that as a supplement to their natural feed, they are also fed whole oats and wheat which is as close to their original diet when in the wild. Long steeped traditions ensure the finest quality traditional turkey and unique poultry products renowned for both their flavour and succulence.
Due to variations in weight, we can only take orders for a weight range, not an exact weight.
As a rule of thumb, you should allow 500g per person, or 700g if you would like meat left over for Boxing Day.

From the heart of the Rhug Estate Organic Farm in Corwen, North Wales we have selected three delicious cuts for you to choose from. Our French Trimmed Rib of Beef, from the famous Angus Aberdeen breed that is prized for its flavour and marbling, is perfect for slow roasting and serving with all the Christmas trimmings.
From the same herd, we have a 45 day aged on the bone sirloin joint matured in a dry ageing chamber, lined with Himalayan salt blocks which help to draw out all the wonderful flavour. We have also selected a Tuscan Style rolled pork loin, where the meat is scored on the rind, rolled and filled with a delicious chestnut seasoned stuffing. To ensure a wonderfully crisp crackling, be sure to rub lots of sea salt into the rind and coat with olive oil. All 3 are perfect alternatives to the traditional centrepiece, as a welcome companion to the festive Turkey roast or delicious served cold.

Fresh Produce From The Market
Our clementine and Gin Cured Salmon is hailing from the Scottish Highlands, specifically Wester Ross. This festive cured salmon is marinated in gin from the local Downton Distillery and seasonal clementine. The unique botanicals used in the making of the gin, combined with the juice and rind of the freshest clementine, results in a mouth watering slice of smoked salmon with fresh citrus and hints of gin shining through. A true feast of flavour!

For your Christmas dinner, our kitchen will once again, be making your firm traditional side dish favourites. We will also be making our very popular Festive Chutney to compliment your cheeseboard and Bayley & Sage crackers. And if you are not a fan of Turkey, maybe we can tempt you to try our succulent Beef Wellington made using the finest beef fillet. It was hugely successful in 2020!

Our Bayley & Sage panettone is made to a classic Milanese recipe by one of Italy’s top artisan bakers. Flavoured with aromatic Madagascan vanilla and full of candied Sicilian orange peel, Tuscan honey and Toritto almonds, this recipe creates a soft and delicate loaf. Only the very best products have the privilege of bearing our trademark ampersand and this panettone, hand wrapped in unique Bayley & Sage packaging is a worthy addition to this exclusive range. It’s ideal for sharing or to be welcomed as the perfect gift this Christmas.
Joining the family of Bayley & Sage own label products just in time for Christmas are our range of truffles. They are made for us by the company that created the original truffle recipe in 1895 combining butter, cream, sugar and rich single origin chocolate. Whether you are a cocktail connoisseur or crave for salted caramel you will not be disappointed with these wonderful flavours.
We sell more than 120 cheeses, so we have selected a few of our favourites for you to enjoy at this special time of year. We think that they are perfect as they are, maybe an oatcake or a crusty baguette but you might choose to enjoy them with a fruit purée, chutney or truffle honey.
Cropwell Bishop Stilton PDO. Carefully handcrafted with the best milk in the Peak District, this cheese has won countless awards, both nationally and internationally. This cheese embodies the passion of cheesemaking, taking three months of intense care to create. It is famous for its creamy, rich and tangy taste. Some will say that this is the conquest of a living tradition!
Montgomery Farmhouse Cheddar. Named after the family that makes it, this cheese is produced from 200 Friesian cows. It is a natural, unpasteurised, handmade cheese known for its quality and deep, rich, nutty flavours.
Gruyère d’Alpage. This cheese specially selected by our cheese buyer comes from summery high altitude Swiss pastures, where cattle graze in fields of alpine grass and wildflowers. The wheels are also produced high in the mountains, which ensures that the transport and movement of the milk is limited. In this way, the cheesemakers can ensure that all the freshness, flavours, charms and qualities are captured in every mouthful.
Vacherin Mont d’Or AOC. Produced exclusively in the winter months therefore only available for a limited time. A combination of milk, craft, spruce bark and tradition makes a superb soft, creamy cheese, with rich earthy flavours and a fruity quality.
We are highlighting 8 bottles of special wines for you to enjoy with family & friends this year. Chateau La Tuilerie Du Puy 2014, Chateau Batailley 2010, Chablis Premier Cru Fourchaume 2018 and Charles Heidsieck NV Brut Réserve Champagne are firm favourites.
Gaja Barolo Dagromis 2017. A fascinating and full-bodied Nebbiolo. On the palate, this Italian wine is structured and well-defined. It has an intense garnet red colour and perfectly accompanies red meat, duck and strong flavoured cheeses. It carries lush floral aromas, with redcurrant and balsamic notes. It’s not without reason ‘Barolo’ is known as the king of wines.
Puligny-Montrachet `Les Grands Champs`, Domaine Borgeot 2018. An elegant wine with pretty floral aromas, complemented by tropical notes of pineapple and hints of tangerine. This wine is fresh, with mouth watering acidity and minerality on the finish. 100% Chardonnay, suitable for white meats, soft cheeses and gently roasted nuts. Delightful with our Vacherin!
Wiston Estate Cuvee Brut. This is Jennie’s favourite sparkling wine, she takes great delight in taking it to France and serving it to the French who are startled that is not made by them! Biscuity with fragrant notes of English orchards, nectarines and honey. It is perfect at all times but especially delicious served with our clementine & gin cured salmon.
