Chilli Prawn Rice Noodle Salad


SERVES: 2-3 | PREPARE: 25 mins | COOK: 10 mins


Submerge the rice noodles in boiling water for 8-10 minutes. While they are softening, pan-fry the mange tout and pak choi for 2 minutes, then dress with the sesame oil, soy sauce and sesame seeds.
Pan-fry the prawns, garlic and spices together for 5 minutes, or until cooked through.

Toss the noodles and vegetables together and add the chilli prawns. Garnish with torn coriander leaves and wedges of lime.


200g rice noodles
200g pak choi, sliced or in wedges
200g mange tout, trimmed
50ml sesame oil
20ml soy sauce
Sesame seeds – to garnish
Fresh coriander – to garnish
12 prawns
1tsp dried chilli flakes
1tsp garlic
1tsp paprika
Olive Oil
