Asian Style Steak & Herb Salad


SERVES: 3-4 | PREPARE: 10 mins | COOK: 2 mins



Before starting make sure the steak is at room temperature. Lay on a chopping board and rub with a mixture of sesame oil, sesame seeds, cayenne pepper (if you are using), salt and pepper. Heat a pan over a high flame and once the pan is very hot add the steak. Sear the meat for 2 minutes on each side, or longer if you wish. Remove the steak from the heat and cover with foil to rest while you prepare the salad.

Whisk together the ingredients for the dressing. Toss the pea shoots, coriander, mint and shallots in a bowl then divide between plates.

Slice the steak and lay on top of the salad. Spoon over the dressing and sprinkle with extra fresh chilli. Serve immediately and enjoy!

Ingredients for the salad

500g Rhug Estate sirloin steak

1 tbsp toasted sesame oil

1 tbsp sesame seeds

1/2 tsp cayenne pepper, optional

100g pea shoots

50g coriander, leaves removed and torn

50g mint, leaves removed and torn

2 carrots, peeled into ribbons

1 red chilli, thinly sliced

1 shallot, thinly sliced

Salt & pepper

Ingredients for the dressing

3 tbsp Tracklements chilli jam

2 tbsp soy sauce

2 limes, juice of

1 tsp cider vinegar

1 tbsp toasted sesame oil

This wine is big and bold, but its opulent, generous fruit flavors perfectly fill out its frame, giving it the balance it needs for enjoyment. Ripe blackberry and black cherry notes mark the palate, unfettered by oak inflected flavor. The texture is firm with lots of fine-grained tannins, while the fruit lingers nicely on the finish.
